Day 17 -- Gardein Piccata

I don't do all that much packaged food, but now and then I see something I want to try. This week, I noticed Gardein in the store, and my friend marci_ny likes it -- at least I think she's the one who recommended it to me. As soon as I saw the little chicken-ish cutlets, I had an urge to make a sort of piccata dish out of them. Here it is. I really liked it. someotherguy said it was okay.

Gardein Piccata

1 package (4 cutlets) Gardein chicken-like cutlets
1/4 cup flour
salt and pepper to taste
1/4 cup Earth Balance margarine, divided (or 2 tablespoons oil, divided)
1/2 to 1 cup parsley, chopped
2-4 tablespoons capers, to taste
juice of one lemon
1/4 tsp granulated garlic, optional

To clarify Earth Balance, put 3 tablespoons of it into a pan and heat on medium-low until all the liquid simmers off. Then put flour on a plate, season with salt and pepper, and dredge cutlets in flour. Add to hot margarine and fry a few minutes on each side. Remove cutlets from pan and wipe out. To still-hot pan, add remaining tablespoon of margarine, parsley, capers, lemon juice, garlic if using, and about 1/4 cup water. Cook the sauce a few minutes on medium, until it's reduced a little and glossy, then pour over cooked cutlets.
